Description
Sodium Acid Pyrophosphate, also known as Di Sodium Pyrophosphate, is a buffering and chelating agent in many food and industrial uses. It is polyvalent, and acts as a Lewis base, so is effective at binding polyvalent cations.
Used predominantly in baking, batters and coatings in the food industry to aid the raising process it is important to be aware it can have varying levels of reactivity. Very slow reacting rate or SAPP15, slow reacting rate or SAPP28 and medium reacting rate or SAPP40.
