Sodium Bisulphite (Sodium Hydrogen Sulphite) is a chemical compound with the chemical formula NaHSO3. Often confused with Sodium Metabisulphite which is a dry crystalline compound, Sodium Bisulphite can be prepared by bubbling sulfur dioxide in a solution of sodium carbonate in water. This is the preferred method as mixing Sodium Metabisulphite with water can give Sodium Bisulphite but will generate volumes of noxious Sulfur as a bi-product. Sodium Bisulphite in contact with chlorine bleach (aqueous solution of sodium hypochlorite) will release harmful fumes. It has applications in food and drink as a preservative and anti-oxidant.
