Material: Sodium Acid Pyrophosphate is a buffering and chelating agent in many food and industrial uses. It is polyvalent, and acts as a Lewis base, so is effective at binding polyvalent cations. Used predominantly in baking, batters and coatings in the food industry to aid the raising process.

Grades: It is important to be aware that levels of reactivity can vary. Very slow reacting rate - SAPP15, slow reacting rate - SAPP28 and medium reacting rate - SAPP40.
